Course information
This course is designed to prepare candidates for the ASI Prep international examination.
Sommeliers Academy provides the training programme but does not administer the ASI Prep examination. Candidates must register for and sit the examination through their national sommelier association, provided that the association is a member of the Association de la Sommellerie Internationale (ASI).
The programme is designed as the first step in a candidate’s professional sommelier journey and provides the fundamental knowledge and practical skills required to prepare for the ASI Prep examination and progress towards higher levels of sommelier certification.
Course Pre-requisites
Candidates should have completed a qualification equivalent to at least one of the following:

Preferably Sommeliers Academy Wine Steward Certificate

Sommeliers Academy SA Wines Level 1 with wine service experience
–
WSET Level 1 Award in Wines, CWA SA Wine or equivalent with wine service experience
Syllabus
–
History and purpose of sommellerie
–
Vineyard influences and basic viticulture, Winemaking principles
–
Principal international grape varieties & regionally relevant varieties.
–
Sparkling, sweet and fortified wines
–
Service preparation, wine storage and mise en place
–
Wine service, including tray service, bottle service, wine presentation and the use of a wine list
–
Basic knowledge of international beverages
–
Customer service, etiquette, complaint handling, professional interaction and attitude
–
Principles of food and wine pairing
