How to become a Sommelier: Your path to excellence
What is a Sommelier?
According to the OIV (International Organisation of Vine and Wine), a sommelier is a trained professional who specializes in all aspects of beverage service, with a strong focus on wine, spirits, beer, and other drinks. However, the profession extends beyond wine expertise; it encompasses knowledge of all beverages and the art of pairing them with food to enhance the dining experience.
Not Just Wine: The Broader Scope of a Sommelier
While qualifications like WSET (Wine & Spirit Education Trust), Cape Wine Academy, and Wine Scholar Guild offer excellent wine education, they are specific to wine professionals and do not cover the full spectrum required to be a sommelier. At Sommeliers Academy, we recognize the value of these qualifications, which form a critical foundation of wine knowledge. However, becoming a sommelier involves developing practical skills across various beverages, service techniques, and hospitality standards.
To accommodate prior learning from these esteemed institutions, Sommeliers Academy separates its wine courses from the hands-on, practical side of sommelier training, ensuring a holistic approach to the profession.
Two Main International Pathways to Becoming a Sommelier
There are two primary international avenues to become a certified sommelier:
1. The Association de la Sommellerie Internationale (ASI)
2. The Court of Master Sommeliers (CMS)
Let’s explore each path in detail.
1. The Association de la Sommellerie Internationale (ASI)
Founded in 1969, The Association de la Sommellerie Internationale (ASI) is a prestigious global body that brings together over 70 national associations, including SASA (South Africa) and SAZ (Zimbabwe). ASI organizes the “Best Sommelier of the World” competition and offers internationally recognized sommelier certifications through these national associations. The ASI is the largest sommelier organisation in the world.
– ASI Prep. A new global qualification aimed at aspiring sommeliers, in search of their first internationally recognised certification. The level on wine theory can be compared to WSET2 level but with extra competencies on spirits and service. This exam ican offered twice a year at the discretion of the national association member of the ASI.
– ASI Certification Level 1
Similar to CMS Level 1, this certification covers foundational knowledge on wine, spirits and other beverages, but emphasizes practical sommelier skills. This exam is offered only once a year at the discretion of the national association member of the ASI.
– ASI Certification Level 2
Equivalent to the CMS Certified Sommelier Level (Level 2), this certification provides a stronger assessment of practical service skills, tasting competencies and in depth theory knowledge. This exam is offered only once a year at the discretion of the national association member of the ASI.
– ASI Diploma
The highest certification offered by ASI, it is recognized for its comprehensive evaluation of theoretical knowledge, tasting skills, and practical service proficiency. This exam is offered only once a year at the discretion of the national association member of the ASI.
ASI exams are conducted exclusively through national associations and are available in multiple languages, including English, French, Spanish, Korean, Italian, and Russian.
2. The Court of Master Sommeliers (CMS)
Established in London in 1977, The Court of Master Sommeliers (CMS) is a recognized institutions in the sommelier profession, particularly in English-speaking countries. It offers a structured four-level certification program:
– Level 1: Introductory Sommelier Certificate
This is an entry-level course designed to introduce foundational knowledge and skills. It is conducted over two days by Master Sommeliers but requires extensive prior study and practical experience. The two days should be considered an intensive review, not the sole preparation.
– Level 2: CMS Certified Sommelier
At this stage, a candidate is considered a professional sommelier. This level involves a deeper understanding of wines, spirits, service techniques, and blind tasting skills.
– Level 3: Advanced Sommelier Certificate
A more rigorous level that builds upon previous knowledge and introduces advanced tasting, theory, and service skills.
– Level 4: Master Sommelier Diploma
The highest level, requiring years of preparation and expertise. It is known for its challenging examinations and is a mark of distinction globally.
To progress through each level, candidates must pass the preceding level’s exams. Sommeliers Academy offers courses specifically designed to prepare students for the CMS curriculum. The Sommeliers Academy International Wine Diploma is advised for any potential CMS candidate.
Certifications from Sommeliers Academy
Sommeliers Academy also offers its own range of certifications, widely recognized by employers and respected in the hospitality industry. These certifications are available through our network of campuses and are incorporated into the curriculum of some universities. Some certifications are selected by the National Department of Tourism of South Africa. Some of our qualifications are part of some South African university curriculum, reinforcing the legitimacy of our institution. Sommeliers Academy is member of SA Wine, and SAWIPB the South African Wine Industry Professional Body that recognises our qualifications.
Additional Certifications by SASA and SAZ
The South African Sommelier Association (SASA) and the Sommelier Association of Zimbabwe (SAZ) provide their own nationally recognized certifications. These qualifications are highly regarded by the hospitality sector, including cruise lines and international employers. Sommeliers Academy prepares for SASA Foundational Exam, SASA Junior Sommelier and SASA Certified being aligned on the ASI Certification 2.
Key Considerations for Aspiring Sommeliers
While the ASI exams are only offered by your national sommelier association on behalf of the ASI, Sommeliers Academy can offer educational packages to prepare candidates for these specific exams. Sommeliers Academy is not offering the exams, that must be booked directly with the national associations.
The same apply for the CMS exam that are offered directly with the recap session. Our students would have to register directly for the CMS session.
Many international employers may require a minimum wine knowledge level equivalent to WSET Level 2, which aligns closely with our SA & International Wines Level 2 certification. However wine knowledge is necessary but not sufficient, therefore it must be combined with one of our service or sommelier certification.
However, it is essential to understand that a certification alone does not guarantee career success. To become a distinguished sommelier, one must combine talent, dedication, passion, and a commitment to continuous learning and improvement.
